Cold Hands & Hot Soup

Happy weekend! Woot! πŸ™‚ I have to share this delicious soup recipe with you that I made the other day! I love making soup and chili when it’s cold out! One because its cozy and two because it’s easy and relatively fast! #winwin

Doesn’t it look so pretty? For soup at least. πŸ™‚

Ingredients:

  • 4 cups fresh or frozen corn (thawed if frozen)
  • 3 cups vegetable broth
  • 3-4 tablespoons butter
  • 1 red bell pepper chopped
  • 3 large shallots, chopped
  • 1 large potato, peeled and cute into cubes
  • 2 tablespoons rice milk
  • 2-3 green onions, chopped for garnish
  • shredded cheese, optional, for garnish
  • salt and pepper to taste

Instructions:

  1. Blend 2 cups corn and 1 cup broth in blender until almost smooth
  2. Melt butter in a large saucepan over medium-high heat
  3. Add red pepper, shallots and potato and saute at least 5 minutes.
  4. Add 2 cups corn, 2 cups broth, and puree from blender and bring to simmer
  5. Reduce heat to medium-low, cover, and simmer until potatoes are tender, about 10 minutes
  6. Add in milk of choice and season with salt and pepper
  7. Ladle into bowls and top with green onions and cheese

We loved it and there was only a tiny bit left for me for lunch. I think it has a good amount of flavor and tasted really fresh. Next time I might add a little cayenne or something to give it a little kick, we like spice around here. The original recipe is linked at the top of the post. Sidenote: I serve ALL of my meals with a big salad first, I just never have it pictured because its not that exciting nor is it part of any of my recipes haha. Just throwing that out there so you all don’t think we eat one course meals over here. πŸ˜‰

30 Days of Thanks: Day 7 and 8

  • 7: Yesterday I was really thankful to have a quick morning coffee with my brother before work. He needed a ride to pick up his car and I will never pass up with opportunity for quality time! I am so lucky to have an amazing set of siblings and don’t take it for granted. I am thankful our parents made it a priority for us to develop a friendship at a young age that has only grown over time. I am even more blessed by the sweet wife he added into our family last year. Siblings really do make the best friends. πŸ™‚
  • 8: Today I am thankful for new life! I got to celebrate my sweet friend today as she and her husband prepare to have a little baby boy, 2 months from today! What a gift to be able to bring a new life into the world and he is blessed already coming into such a wonderful group of family and friends! He was pretty active during the shower today and I think it was because he knows how loved he is already! πŸ™‚ We can’t wait to meet him!
